Wednesday, March 14, 2018 HOW DOES A 5 STAR FOOD HYGIENE RATING HELP MY BUSINESS? 5 Star Food Hygiene Rating System The Food Standards Agency (FSA) 5 star food hygiene rating scheme needs to be looked at as a benefit for any food business. The food hygiene rating sign is an instant and friendly assurance signal that tells potential customers to ‘come in we have high standards of food hygiene!’ After all, who would not be attracted to the positive news and feel instantly comforted and reassured that your next eating out trip will not leave you with stomach cramps or worse a trip to the doctor! This could be the case if the food you have eaten was compromised or was handled in an unhygienic manner and you are now suffering from food poisoning, e.g. salmonella. Because your restaurant, café or pub has achieved the 5 star food hygiene rating, you obviously have a cleaning system in place and therefore your establishment not only delivers on food hygiene, but also on cleanliness, because of course everybody loves a spotless place to eat enjoying fresh surroundings! Further benefits to a 5 star food hygiene rating Another huge benefit from having achieved the 5 star food hygiene rating is, that it gives brand awareness and for customers to associate your company name synonymously with the FSA hygiene scheme score. There are only benefits in achieving the 5 star rating and displaying your food hygiene rating sticker or logo. It will spur on staff to keep up the high standards and it will most likely boost their morale by knowing they are regularly receiving training and that they are working to the highest standard. During a workplace walkabout or snapshot audit, the environmental health officer (EHO), or food safety officer (FSO), who has been sent by your local authority, will write a detailed audit report every time they visit your restaurant, café, pub, hotel or food establishment. They will inform you of the audit score and explain how they arrived at their result and what possible improvement your business may need to make, in order to improve your rating. If the EHO found that you have satisfied them in all three elements, you will be awarded with the 5 star food hygiene rating. The rating scheme is divided into three elements, which are: a) That your food is handled hygienically (is there a HACCP in place and is it used and fully understood by staff and management) i. Meaning you know your supplier and have the paperwork to proof provenance ii. How the food is delivered (is it properly wrapped, labelled) and is there a data system in place similar to a ‘goods in’ procedure iii. Are the utensils you use for preparing food clean, are the worktops regularly wiped and disinfected iv. Is the food cooked to the right heat, are regular checks made, are they logged. If food is re-heated, again, is the food heated to the right temperature and are procedures checked and logged v. When cooling down food, is it done in the time span according to procedure vi. Is the food stored correctly? Wherever the food is stored, it needs labelling with the correct data and placed in the correct order b) The condition and structure of the building i. What is the general state of the building? ii. Is it clean? Is there a cleaning rota in place and if so, is the cleaning done at the required times? iii. Is the layout causing problems with a smooth run of employees working in the kitchen, can improvements be made? iv. Is there plenty of light in the building, in order for employees to work safely? Is there plenty of natural light or does additional lighting need to be installed. Can all exit signs be seen clearly and are fire exits free from any obstacles. v. Are ventilators regularly maintained throughout the building, and are they incorporated into the cleaning schedule? vi. Are all machines, surfaces regularly cleaned and disinfected and are checks logged? vii. Is all electrical equipment periodically PAT tested, cables checked for kinks and sockets and socket casings in good condition? Is there a reporting procedure for damaged equipment? viii. Is all fire safety equipment regularly serviced and are monthly checks recorded? ix. Is first aid equipment regularly checked by appointed persons and is there a reporting system in place? c) Business procedures i. Is there a food safety management system in place, HACCP, policies, risk assessments and checklist? ii. Is there clear communication between all employees and management or can it be improved? iii. Have staff received appropriate training or is there a need for improvement? The following training should be given to staff and management: Front of house should be trained to: Level 2 Health and Safety Level 2 Food Safety Cleaning Personnel should receive: Level 1 Health and Safety Kitchen staff: Level 2 Health and Safety Level 2 Food Safety Chefs and Managers Level 2 Health and Safety Level 3 Food Safety Do certain staff trained in risk assessing the workplace have the knowledge to inform the business of health and food safety compliancy and changes to regulations in the law?
