Wednesday, April 4, 2018 CASE STUDY: MASSERIA GROUP Masseria Group At the beginning of January 2014, we received an email from a restaurant called, The Salusbury Foodstore, London. Their Managing Director had heard about us through a colleague who attended one of our health and safety at work training seminars. They enquired if HRS Management could help support them and their in-house Operations Manager, with guidance and training on health and safety and food hygiene matters. They are looking to expand into a chain of restaurants within the next coming years and would like to make sure they don’t stumble on any food safety and health and safety legal compliance issues, which perhaps could hinder their goal to grow their brand. Their current Operations Manager would be our main contact in terms of liaising audit dates and arranging the various training throughout the year with us. They were looking to invest in a solid outsourced health and food safety consultancy back-up, that provides them with a comprehensive Food Safety Management Systems, which is built around the principles of HACCP (Hazard Analysis & Critical Control Points), that is solidly implemented, understood and used correctly by all staff and which is maintained throughout the year. They further would like us to carry out two announced audits and one unannounced snapshot audit inspection per year and then communicate any issues that need rectifying to their managers and staff of their restaurants. They are looking for someone who knows the hospitality industry inside out and can make instant recommendations, keep them legally compliant and liaise with Directors, Managers, staff and the Environmental Health Officer (EHO, so they can concentrate on growing their brand without having to worry and spending valuable time inspecting.
